Here's what I do best…

To make really good Indian road-side chai: Grind to a fine powder: 5 parts green cardamoms with 1 part black peppercorns, 1 part cinnamon bark, 1 part whole cloves.  Add 1 dessertspoon of this spice mix to 1 pint water/milk with 4 teaspoons strong black tea, 1 tablespoon of sugar and 1 teaspoon finely grated fresh root ginger. Bring the lot to the boil and simmer for as long as you can bear to wait. Strain and serve in small clay chai cups. Alter proportions to suit your taste. Indians generally add more sugar and milk.
